They are russets, but they are fresh dug and have not been processed at all. This means the dirt is still on them, which helps them keep longer. There are small, but not "new", medium, baker, and extra large potatoes in the batch. We have started processing two feedbags worth of them. We are using the small potatoes to make frozen hashbrown mixes. We are starting to dehydrate some to make "au gratin" dry mixes. We have four more feedbags worth to sort and begin to process.
Forgive me for asking but, do you know any details such as the type of potatoes? Reds, Russets, etc? are they early buds or baker sized? what quantities? It helps to know these things when considering who might receive them.
